Simple Chinese Dressed Noodles
Ingredients:
Water - 1/2 Cup
Oil - 2 Tsp
Soy Sauce - 1 1/2 Tbsp
Chinese cooking wine (shao xing) - 1 Tbsp
Rice Vinegar - 2 Tsp
Sugar - 2 Tsp
Tapioka Starch - 1 Tsp
Green onion - 2 (keep separate, save one for garnish)
Cilantro - 1 Tbsp (garnish)
Basil - 1 Tsp (garnish)
Ginger - 1 slice
Thick udon noodles - 200 Grams (two servings)
Instructions:
Boil noodles for 6 minutes
Strain in Colander
Douse in bowl of cold water, and strain again
Set noodles aside
Mix water, soy sauce, vinegar, sugar, tapioka starch, and wine in bowl
On medium-high heat fry slice of ginger until edges brown, turn over slice. (flavors oil)
Add green onions, fry for 30 seconds. (save some green onions for garnish)
Mix sauce in bowl to stir in tapioka starch that has settled.
Add sauce mixture to pan.
Simmer for 3 minutes, stiring regularly.
Add noodles to sauce and mix together. Top with garnish and serve.
I like to eat these noodles with some hot chili sauce and some chinkiang vinegar.
