Boil noodles for 6 minutes. Strain, and douse in cold water, then strain again.
Combine sauce ingredients in bowl. Heat oil in wok, use medium-high heat. Fry ginger slices until edges turn brown. Add green onions and garlic, stir and fry for 30 seconds. Add beef and brown for 1-2 minutes. Add tomatoes and fry for about 3 minutes until tomatoes begin to cook. Add sauce and bring to a boil, cover and simmer for 5-8 minutes or until desired sauce thickness and flavor concentration is reached.
Add noodles to sauce in wok and mix sauce into noodles. Pour into serving dish and top with sesame seeds and chopped cilantro.

Optional beef marinade:
If you have the time you can marinade the beef to give it a nice zesty flavor to compliment the tomato taste.
Combine the juice from 1/2 a lime, 1/2 tsp black pepper, 1 tbsp olive oil, and 1 clove garlic (minced). Mix with beef in a bowl to marinate.
